About Anjali Thakur
Anjali Thakur is a young researcher of IIT Kharagpur. She has completed her B. Tech (2016) in Agricultural engineering from OUAT, Bhubaneswar and has received Gold medal for securing highest OGPA in the Department of Agricultural Processing and Food Engineering. She has completed her M. Tech in Food Process Engineering from Indian Institute of Technology Kharagpur securing first position. Now, she is pursuing her Ph D in the research topic ‘Technology for the Manufacture of Grain Based Carbonated Beverage Premix’ under the guidance of Professor H N Mishra. She has received Young Student Invention Award (2018), Department of Agricultural and Food Engineering, Indian Institute of Technology Kharagpur for filing the patent entitled ‘Cereal Based Carbonated Beverage/Mix and a Process Thereof’. She has qualified ICAR-NET in the subject of Agricultural Processing and Food Engineering in 2018. She has felicitated with Gandhian Young Technological Innovation (GYTI) award in the year 2019 for the research topic “Development of Process Technology for Manufacture of RTD Carbonated Grain Beverage” at Vigyan Bhawan, New Delhi. Her broad area of research include Carbonation, Food formulation, Extrusion, Rheology and grain based premix and product development. Besides the expertise in research areas she has gained practical training experience from Odisha Lift Irrigation Corporation (OLIC), Bhubaneswar. She has participated in poster presentation in many national and international conferences.
